Well, after my trauma the other day, I've been hesitant to start anymore cooking projects, but alas, I couldn't help myself. I made two types of our favorite Christmas candy this morning and both are SUPER easy and SUPER yummy! Even a novice cook can make these candies - all you need is a bowl, a spatula, a microwave, parchment paper and a cookie sheet! Each recipe has 3 ingredients or less and they're done in less than 15 minutes!
First, I made Peppermint Bark. This can be made with regular peppermint, but I like to get Red & Green Peppermint Crunch. These are the only two ingredients:
It takes less than 10 minutes to make this...start to finish!
Peppermint Bark
- Melt 24 oz. of Almond Bark in the microwave for about 2 minutes. Take it out, stir, and micrawave again for another 1-2 minutes until completely melted and smooth.
- Stir in 8 oz. of Peppermint Crunch (or crushed peppermint) until evenly distributed.
- Line a cookie sheet with wax paper or parchment paper.
- Spread mixture onto the cookie sheet.
- Pick up (just a few inches) and drop the pan a few times to even out the candy.
- Stick in the frig for 5 minutes to set.
- Break into pieces and it's ready to eat!!
Here are the three ingredients:
Chocolate Peanut Clusters
- Pour (1) 12 oz. bag of semi-sweet chocolate chips and (1) 10 oz. bag of peanut butter chips in a microwaveable bowl. Stir to combine.
- Melt in the microwave for about 2 minutes. Take it out, stir, and microwave again for another 1-2 minutes until completely melted and smooth.
- Stir in 2-3 cups of salted peanuts.
- Line a cookie sheet with wax paper or parchment paper.
- Drop by teaspoons (or larger if you like) onto wax paper or parchment paper.
- Stick in the frig for about 10 minutes to set.
- They are ready to be munched on, or wrapped up to share with friends!
I hope you enjoyed these 2 quick and easy recipes for fabulous Christmas candy! In under 20 minutes, I had completed a recipe of each and packaged them up to share with friends. **I recycled a pie pan, covered it in plastic wrap and added a bow**

I can't say for sure - it never lasts that long at my house, but if I had to guess, I'd say that yes, they'd both last a long time if stored in a sealed container and kept cool. The peppermint might start to get soft and no longer crunch, though. That would be my only concern!
