Adventures in Cooking :: Broccoli & Cheese Cornbread


Okay, once again...do I label this cooking or baking?  Technically, I'm baking...but cooking sounds more righter.  Uh-huh, uh-huh, I am a homeskul Mommy.  Just kidding...I know 'more righter' isn't right...I think.

Seriously, this cornbread has been a family favorite for years.  My Mama made it for us when we were kids, and I think she got the recipe from my aunt, but I'm not sure.  Anywho, it's really, really good and it's a fun way to get more veggies into your kids.  I mean, my kids actually like broccoli (as long as it's got cheese piled on top), but if you're kids, or your husband, or whoever doesn't like broccoli, or if you want a new twist on broccoli, you might give this recipe a try!  It has cheese, butter, and Jiffy mix...how could you go wrong?  We heart Jiffy mix around here...remember the Corn Dog Casserole?  Have I ever mentioned that I ramble?  Shutting up now.  Here's the recipe:

Broccoli & Cheese Cornbread



Ingredients:

1 box Jiffy corn muffin mix
1 lb. frozen Broccoli, thawed and drained
1 medium chopped onion (optional)
2 cups shredded cheddar cheese
½ cup milk (not pictured)
4 eggs (ours are fresh from our hens...hence the rainbow colors)
1 stick butter – halved

Preheat oven to 400° degrees.  Put half a stick of butter in a 10" cast iron skillet*.
 

Place in the oven to get warm and melt the butter.  Melt the other half of the stick of butter and mix with all remaining ingredients.


Pour the batter into the warmed skillet...with a grinning child standing nearby, of course....


...and cook for 30-40 minutes or until browned on top. It will be easier to remove from the pan once it cools slightly. Run a spatula under it to loosen it.


*This can be cooked in a glass baking dish, but turns our much better if cooked in a well-seasoned skillet.

This cornbread is so good!  If you have a hungry hubby and 5 kids...this is what your skillet will look like in a matter of minutes...
