Chicken in a Skillet
Here are the ingredients...
You start with chicken. (did I hear someone say, "duh?"). No? That was me talking to myself...sorry! I used chicken legs because that's what I hand on hand, but any chicken will do! You'll also need potatoes (I'm using baby yellow potatoes), carrots, onion, 2 chicken bouillon cubes (or I'm using 2 tsp. of Better than Bouillon), 2 cups of water and half a stick of butter...oh, and a cute kid (loving the camera today, unlike this picture)...
You'll want to put it in a huge, deep skillet. I use my red 12" KitchenAid non-stick
Top that with sliced onion and sliced butter.
Put a tight lid on that pan and allow it to simmer for about 30 minutes. When you open it up, it's gonna look like this...
Now, just dump the potatoes and carrots on top and toss them together.
Allow it to simmer for 30 minutes with the lid on, and it's done! I'd show you a picture, but I was in the middle of making fondant when hubby got home and the family started eating... I just totally flaked and missed the last, most important picture....or will this one work?
Maybe it'll at least convince you that it was good... because it was almost all gone (I didn't even get a bite!). Anyway, this is a simple, frugal meal that really hits the spot! It's filling and yummy - and you should try it soon.









I bet you could do this one in a crock pot pretty easily too! Great recipe!
ReplyDeleteand guess what else I discovered Rose?? you can make egg noodles and toss them with the chicken broth in tht almost empty pan and your meal will go a little bit further and they are soooo yummy! I discovered it by accident (being here in Italy and needing to have pasta at nearly every meal I have to find a way to incorporate pasta into my typical American dinners ;) Anyway, yum yum yum!! I just made it last week and the couple that was here brought home all of the left overs they loved it so much! The egg pasta tossed in the chicken broth I mean. ps I just got a crock pot so you'll need to share some recipes with me if you have any :)
