Freezer Cooking Day :: April
I want to try to participate in Freezer Cooking Day hosted by Money Saving Mom & Life as Mom this week! My calendar is already overflowing with things going on this holiday weekend, but I'm going to try to squeeze in some cooking tomorrow & Friday! I guess we'll see how much I get done!?!
This list is sort of 'off the top of my head' without much planning or checking my pantry, so we'll see what I can realistically pull off! When I did this a couple of months ago, I was exhausted by the end, but it was pretty successful for me and very helpful throughout the month!
So...here's what I hope to do (in no particular order):
Baked Penne (x2)
Sour Cream Banana Muffins
Chicken Spaghetti (x2)
Black-Eyed Peas, Pinto, Black & White Beans
Chocolate Chip Cookie Dough (double batch)
Pancakes (x4)
Chicken & Rice Casserole (x2)
Three Cheese Baked Ziti with Spinach (x2)
Sweet Potato Casserole (x2)
Cooked, Chopped Chicken (4 lbs)
Cooked Ground Beef (5 lbs)
Brown Rice
Biscuits & Sausage
Strawberry Rhubarb Pie (x2)...for Easter!
This list is very ambitious considering everything else we have going on, but I figure I won't accomplish it all if I don't at least try!

Yum! Do you cook up the Brown Rice and cut the cooking time so you can reheat it? I've never frozen rice by itself (I've done it in a casserole). Thanks!
ReplyDeleteI actually cook it completely done and freeze in portions in my freezer. On the day I want to use it, I thaw it on the counter, then reheat in the microwave for just a couple of minutes. It turns our perfectly!!
