Buttermilk Crab Pasta Salad

My pregnancy cravings seem to be taking on a pattern right now.  I'm craving salads every day... yummy, cold salads.  Everything from just a plain old green salad to the Bacon & Tomato Ranch Pasta Salad I made last week..and now this Crab Pasta Salad.  I don't remember how or where I found this recipe years ago, but I've tweeked it to my taste and it's become another family favorite!!

I didn't have it on our Meal Plan this week, I had a craving and just had to go for it.  What's a pregnant girl to do??  So, here it is...oh, and don't let the buttermilk discourage you (if you're not a buttermilk fan), I promise, it's super duper delicious!!

Ingredients:
1 lb. cooked pasta (I use bowtie)
12 - 16 oz. imitation crab, torn into small pieces
1 cup mayonnaise
1/2 cup buttermilk
4 green onions, thinly sliced (optional)
1 lemon, juiced
1 teaspoon onion powder
2 cloves fresh garlic, minced
2 Tbsp. sugar (optional, good with or without)
1/2 teaspoon seasoned salt (I use Lawry's)
2 tablespoons chopped parsley
Salt & Pepper, to taste

Directions:

Cook the pasta in a large pot of boiling, salted water until done, 10 to 12 minutes (or according to package directions). Rinse with cold water, drain and set aside.

In a large bowl, combine the crab meat, mayonnaise, buttermilk, onions*, garlic, lemon juice, and seasonings.  Whisk together until well combined.  Add the pasta and toss until well coated. Cover and chill  for a few hours or overnight.

*I don't eat raw onions ever.  Green or otherwise, so I never use them in this recipe, but if you like them, go ahead and ruin your pasta salad...I mean, add them to your pasta salad and enjoy.  I was just kidding.  About ruining it.  I think.  Maybe.  

That's it!  It's very, very easy, and very, very addictive!!   I ate 3 bowls of it last night enjoyed a huge serving of it last night and am looking forward to having it for lunch tomorrow!!  I have to double the recipe for our family of 7 (almost 8) and it still turns out beautifully...just be sure you have a great BIG bowl!
