Freezer Cooking Day Results

I told you on Friday that I was going to participate in the Freezer Cooking Day.  I spent a huge part of yesterday cooking and baking and I got alot done!   I have one thing to say though...I won't be so ambitious next time.  My feet are killing me, my kitchen is a disaster, and well, I still have the lingering cold from last week so I'm worn slap out!  My finished list looks alittle different from my original plan, but that's okay! This is (almost) everything I cooked today!


Here's the original list with **notes:
  • BBQ Meatballs (minus the BBQ) - I'm gonna use PW's recipe for the meatballs and when I'm ready to serve them at our Super Bowl get-together, I'll use my favorite homemade sauce. **I altered the PW recipe slightly.  I ended up with almost 3 lbs. of frozen cooked meatballs.  I took a picture of the finished product..but somehow I can't find it.  My kids keep switching out my SD cards from computer to camera to DSi and well...I can't find it.
  • Brown Rice - cook and divide into meal portions **I got 3 portions of rice cooked.  We've switched almost exclusively to brown rice, which is a great thing nutritionally, but it takes forever to cook!  By cooking and freezing it ahead, when we need rice with supper, I just pop it in the microwave and reheat it and it's ready in minutes!  No pic of this, or the next 2 things either...y'all know what rice, beans, and hamburger looks like, right?
  • Pinto Beans/Refried Beans - cook beans & freeze, possibly make some into Refried Beans to freeze.  **Well, I might have gone overboard here.  I have enough pinto beans and refried beans to last a long time!  I put up 3 bags of whole beans and 4 bags of Refried beans.  If you've never had homemade refried beans...they beat the canned ones by a mile and they're very healthy!
  • Ground Beef  - brown it and divide into 1-1 /2 lb. portions.  **I didn't have much ground beef left after making meatballs and baked penne, but I was able to put up 2 portions.  When we want spaghetti or tacos, it's super easy to pull it out, mix it with sauce or seasonings and have a meal in minutes!
  • Baked Penne - **I definitely had better luck than  last time I made this.  My only struggle this time was convincing my hubby that I was making it to save for later... not for him to eat immediately!  It's his fave, by the way!  This looks so much yummier once it's cooked an bubbly and all that...
  • Zucchini Bread - I have some zucchini in the freezer I've been needing to use up..now I just need a recipe.  *I ended up making 2 dozen zucchini muffins.  They're so-so; probably won't be a favorite around here, but I have enough for 2 breakfasts and I figure if we put enough butter on them, they'll become more appealing. 
  • Black-Eyed Peas - some to freeze, some for our 5th Sunday Meal at church Sunday **I didn't get these done on Saturday.  I put some in the pot to soak late Saturday night and got up and cooked them for church Sunday morning, but I ended up not doing enough to freeze extra.
  • Whole Wheat Waffles & Pancakes - I will be making these for breakfast tomorrow and doubling or tripling the recipe to freeze some for another 2 or 3 breakfasts. **I skipped the pancakes, but doubled the waffle recipe.  We had some for breakfast/lunch and froze enough waffles for breakfast another morning!
  • **Oatmeal Pecan Cookies - This was an addition to my original plan.  I was craving cookies and these are some of our favorites...what can I say?  I mixed up the dough, cooked half and scooped the other half into balls and froze.  The next time I'm wanting cookies, I can just pop them from the freezer to the pan! The frozen ones are in a ziploc pictured, but the finished ones are missing because they've already been eaten.  However...I got this pic when they were still too hot to eat!
  • **Beef Stroganoff - this was also an addition to my original plan.  **I had a small roast in the freezer from Angel Food that wasn't big enough to stand on it's own as a pot roast (for the 7 of us), so I found this recipe from Tammy and decided to make it for dinner.  I already had the egg noodles on hand, so this came together easily and it was delicious!  Also not pictured because it was eaten immediately!
  • Mashed Potatoes - I hadn't planned to make these either but when I found a rotting potato in the bag, I decided it was best to go ahead and cook the rest just in case they were all on the edge of going bad.  My hubby peeled them for me and I just diced and boiled them, added butter and milk and popped them in the freezer for another day.
  • **And last...my 12 year old Joshua decided to make some homemade Honey Wheat Bread.  He has actually been begging to bake bread (again, he's done it before) for ages and I finally agreed to let him tonight.  He did a great job (aside from the mess, but he cleaned up after himself) and the house smells so yummy!
 
 
That's that!  Now I have breakfast for a few days, rice, peas, and beans for side dishes, Baked Penne for dinner, cooked ground beef for casseroles or spaghetti, cookies for easy snacks or dessert and meatballs for the Super Bowl...oh, and of course that yummy honey wheat bread. It took for.ev.er. a few hours out of my weekend, but saved me tons of time over the next few weeks!

Freezer Cooking Day - Meatballs to Pancakes

I've told you about how I save money cooking ahead and freezing.  I don't normally plan to do this (especially not on this scale)...it just happens after I go shopping or while I'm cooking another meal (I'll double the recipe and freeze one for later).  Well, not this time...I'm going to be deliberate!

Tomorrow I'm planning to do a Freezer Cooking Day - inspired by Money Saving Mom!  I'll spend (part of) the day cooking and prepare a few different things to store in the freezer.  This will help me make meals come together fast later in the week or month!  Since I haven't done this before and I'm sort of flyin' by the seat of my pants, I'll give you my 'plan' - but you can't hold me to it!  I'll just take pics and document as I go along.  Then on Sunday or Monday, I'll show you what I ended up with and how it worked out!

Here's my list of things I plan to make:

Adventures at Walgreens (not a good trip)

Well, I mentioned in 7 Quick Takes that I sort of cheated on our January budget by doing next week's shopping early.  I think that decision was a bad one when it came to Walgreens...I ended up doing some not so great deals.  I told myself I should go and grab the cheap Huggies wipes and maybe one or two other things on sale.  I especially wanted the Benefiber deal, but I forgot to print enough coupons.  That threw off my whole trip.  I had planned to do it first, then use that RR to buy the other things.  I didn't do so good thinking on my feet after that fell through.  I got good prices, but I could've done much better if I had planned and thought out my trip.  I rarely spend more than $5-$10 out of pocket at Walgreens...today I spent $35.98.  YIKES!

7 Quick Takes (Volume 6)



YAY!  It's Friday!!  And it's time for 7 Quick Takes hosted by Conversion Diary !  As usual, I'm just going to spout off the first 7 things about my week that come to mind - no rhyme or reason here.

1.  I have a cold.  The whole thing: runny nose, sinus pain, watery eyes... Who knew a person could go through several thousand Kleenex in one day?  It's miserable.  I'm miserable.  If I'm not careful, I'll make other people miserable.

2.   We survived the Eat From Your Pantry challenge and managed to stay within our January budget (barely)...until I cheated.  Sort of.  Well, before last night, we had $3.72 left for the month of January.  Granted, we had no butter, milk, bread, cereal, fruit, oil...the list goes on.  But we made it and we had pretty good meals.  However, I officially cheated last night - since it's technically still January.  While I'm certain we could have survived another 2 days of eating from our pantry/freezer, I made an executive decision to go ahead and run to the big city last night and grab some things we really needed and since we live pretty far out in the sticks, I went ahead and did next weeks grocery shopping while I was out.

3.  I mentally committed to potty train my 3 year old before I run out of diapers again.  I realized driving home from shopping last night that I might have overdone it on diaper deals.  I bought 7 bags of Luv's (deal still available) online this week and another 2 bags of Huggies last night - and I'm still using the Pampers from last week's deal.  I figure that gives me  about 3 months to get him trained.  I can do that...right?

4.  I have some of the best friends a girl could ask for!  I've been praising God for them this week - and praying for them lots!  One lives in Italy.  She and her husband are missionaries.  I dream of the day she lives next door (which will never happen), but in the meantime, I'm so thankful that we're able to talk and email and share each others burdens.   God blessed me tremendously the day he brought her into my life. 

I also have a dear friend in the town we just moved from.  She cracks me up so bad - I'm usually in tears (whether from sadness of missing her, or laughing so hard it spills out of my eyes!).  This week I got an email from her - it was a sad email.  She had had a bad week.  But I was laughing so hard I felt guilty.  Without disclosing too much, I'll just say it involved running through the woods naked, Al Gore, and Redneck National Security!  Maybe one day I'll start a blog series..."Emails from my crazy friends"...hehehe.

5.  My clean laundry pile has reached monumental heights.  It never ceases to amaze me how quickly laundry goes from the one load I avoided like the plague never got around to folding turns into 17 loads that I'm having to step over and dig through to find my chair.  Couldn't my kids just wear the same thing at least 2-3 days in a row?  I guess not.

6.  Christian, my baby boy (the 3 year old diaper-user I mentioned above) loves music.  He loves to sing.  When he wakes up in the morning, he goes straight to my purse, grabs my mp3 player and puts in the earbuds and turns up the music LOUD.  If he gets into his own little world, he'll start to sing and get louder and louder and tap his foot or pat his hand...I think God has given him a song in his heart.   One day, we caught him in the yard, on the car, using the antenna as his microphone.  If I knew how to attach a recording, I'd let you hear him...but since I can't, you'll have to settle for this adorable picture:
7.  I'm looking forward to 2 upcoming events.  (1) Our church is hosting a Valentine's banquet for the young married couples, child care included!   First, I'm sooo excited that we're still 'young married'.  Second, child care included...WHOO HOO!!!  (2) The Super Bowl is only 9 days away.  Since Brett got beat out...then I just have to say GO SAINTS!!!  We're gonna be hosting a little get-together that evening complete with homemade Hot Wings and Meatballs.  I'm SO excited!

Adventures in Cooking: Creamy Crockpot Potato Soup

I haven't felt great today, and I wanted to have supper done early so I could just relax tonight.  I scanned my kitchen and realized quickly that one thing I needed to use up was those potatoes I got on the cheap last Saturday.  I also did not want to be in the kitchen all day, so I wondered about doing something with potatoes in my crock pot.

A quick Swagbucks search told me that yes, Potato Soup could be done in a crockpot and that was just want I wanted...something I could finish up this afternoon and walk away from.  I gleaned from a few different recipes and came up with my own version.  That need led to this creation:

Creamy Crockpot Potato Soup


Here are the ingredients:

5 lbs. of russet potatoes
2 carrots
2 stalks of celery
1 onion
green onion (optional)
4 cups of water
1 tbsp. parsley
4 bouillon cubes
2 cans of cream of chicken soup
Evaporated milk is pictured, but I ended up not using it.  The soup was plenty creamy enough after hours of cooking!  Oh, and I did sprinkle in some salt!

First, chop all of the veggies into bite-sized pieces and toss in the crock pot.










Then pour in the rest of the ingredients:









Stir everything together (my crock pot was almost too small):









Then pop the lid on and walk away.  It only took me about 10 minutes to throw this all together!  I cooked this for about 2 hours on high, then I turned it down to low for 2 more hours.  It's perfect!  I'm typing between bites.  While my husband is not usually a fan of meat-free meals, he really likes it too!  It's hardy, warm, and very flavorful!
