Quick Takes Friday :: Volume 35

Wow, it's Friday already..and it's time for 7 Quick Takes Friday!  Be sure to visit Conversion Diary to read more Quick Takes.  In the  meantime, here are 7 little notes about my life this past week.  You can read all my previous Quick Takes here. 

1.  I'm going to try to break a record here and do my shortest Quick Takes ever.  First up, my youngest little boy Christian (he's 3, almost 4) brought me flowers this week.  My heart melted and I've had them on my night stand ever since.  Isn't this the most beautiful bouquet ever?

 2.  This is a major thing to be mentioned so briefly, but we bought a house yesterday.  Actually, we bought the house we've been renting.  It's a long, long story, but anyway...we're homeowners.  Twice.  I mean, now we own two houses..the one we're living in and the one we couldn't sell and are now (unfortunately) leasing.  Yay!! (I think!?!)

3.  Today I'm spending the day out with my Mama, my 2 sister-in-laws, my Aunt, and hopefully my sister (for at least part of the day).  We'll be celebrating my Mama's birthday and I'm hoping to have a fabulous, relaxing day!  Maybe I'll have pics to share next week!

4.  I'm working on two Fall/Halloween cakes today.  I don't have pics to show you yet, but I will...I promise.

In the meantime, remember that pile of cupcakes I had all baked up last week (#3)?  Well, I decorated them for a Pumpkin Carving Party last weekend.  They are very similar to my previous Fall/Halloween cupcakes, except I used lots of colored sugar and add more bright colors than before! The addition of purple was my favorite quality..now I'm wanting to do everything purple!

5.  I still have at least 27 loads of laundry to fold had lots of laundry to do this week and my baby boy (the one who gave me that adorable flower arrangement in the Tupperware cup) decided to help me.  I was standing folding the laundry and each time I'd reach for a new piece of laundry, he started handing it to me instead.

Then he started placing them on his head...and giggling...while waiting for me to grab it so he could put a new piece on his head.  It was totally adorable, and we had the best time getting almost nothing done "folding laundry"!!

6.  I started a new book this week.  But I cannot seem to get past the first chapter.  It's called Wrapped in Rain.  I got it from PaperbackSwap because when I read my first Charles Martin book, I could. not. put. it. down.  (By the way - I highly recommend The Mountain Between Us...awesome book!!).   But for now...I can't seem to get into this one.  I'm going to keep trying and see if it gets better.  Has anyone read it?  Or any other Charles Martin books?

 7. Oh, and I made apple cupcakes this week.... aren't they cute??  They're not "apple" flavored or anything...they're just vanilla cake with vanilla buttercream...but they're APPLES...for Fall...with sparkly, glittery colored sugar!  They made me smile!!

Adventures in Cooking:: World's Best Potato Salad

I know, I know...World's Best?  Really?  Well, that's what my oldest son calls it,  and so it is.  When I make this potato salad, I never use less than 4 or 5 pounds of potatoes and I never have one drop of leftovers.

The last time I made it when my brother and his wife were over for supper.  We had Grilled BBQ Ribs as the main dish...and while there were leftover ribs...there was NO leftover Potato Salad.  In fact, there was arguing over who was going to get the last serving!  Anywho, since I've had it on my Meal Plan a couple of times lately, I thought I'd finally share the recipe!

So...here it is.  The best ever recipe for Potato Salad.

World's Best Potato Salad

Ingredients

4 pounds red potatoes* (about 8 large)
4-5 hard-boiled eggs
1 cup mayonnaise (not low-fat, not Miracle Whip)
1-2 tablespoons spicy brown mustard
1 1/2 teaspoons salt
3/4 teaspoon pepper

Here's how I make it.  First, boil the whole potatoes for about 30-40 minutes, until fork tender (when you poke a fork in the middle of them, they easily slide off without sticking).  Drain and cool.

Next, dice the potatoes in about 1 inch cubes.  I usually take some of the skin off, but since we really like the potato skin in our potato salad, I leave some too!  It adds some extra color and texture!

Now - here's a secret that for some reason makes this potato salad extra special.  DO NOT dice the boiled eggs...grate them.  It's super easy and fast, and well...better, for some reason.  I didn't believe it until I tried it myself and now I'm sold!  Grated eggs are better than diced.

Now, add the mayo, spicy mustard, salt and pepper.

Then gently stir it all together and serve.  OR, if you prefer, cover and chill, then serve.  It's really delicious at room temperature right after you  mix it all up, but good chilled too!

*Baking potatoes can be substituted for red potatoes - although we like red best!

Now - here are some optional ingredients (that I never use).  I encourage you to try the original recipe first...then if you must, add in some or all of these other things!

• 1/3 cup sweet pickle relish or sweet salad cube pickles
• 2 celery ribs, diced
• 1/2 small sweet onion, diced

 That's it...super delicious, easy potato salad!  World's Best...according to my family!
