This morning, we had Funnel Cakes for breakfast. Hubby asked for them and I obliged. Really, that's not so strange, huh? Donuts are batter (dough?)...fried, and covered in powdered sugar. So are funnel cakes. Just in a different shape.
Do ya'll eat funnel cakes? You know, like at the county fair? I used to make them pretty often, but it's been awhile. These are super easy to make (you know...that's my favorite kind of recipe), and can be ready in under 15 minutes!
My kids were in charge of the camera this morning, so there aren't as many photos as I'd like and some of them aren't well...taken by an adult, but you'll get the general idea!
This is all you need:

Funnel Cake
Yields 6-8, 10" Funnel Cakes
Ingredients:
- 1 1/3 cup self-rising flour
- 1 egg
- 1 cup milk
- 4 Tbsp. sugar
- Dash of vanilla (I used imitation for this)
- Oil
- Powdered Sugar
Directions:
In a medium bowl, whisk together the flour, egg, milk, sugar and vanilla. Be sure to get it pretty smooth.In a shallow 8-10" skillet, heat about half an inch of oil until sizzling hot. Now, I take my batter and scoop it into a Tupperware funnel and then just drizzle it into the oil. It'll fry and brown in just a minute or so, then flip it and brown the other side.
You want it to be golden brown, but not too crispy. Allow the oil to drain off a bit! The one dripping above it a little too brown, but the one below is perfect.
Then sift powdered sugar over the top and eat while it's still warm...
