Happy Memorial Day with Cake Balls

With all the cake baking I do, there is always leftover cake - especially when I have to carve a cake to a specific shape.  A couple of weeks ago when I finished up the Hannah Montana Guitar cake, I decided that instead of feeding all that cake to the chickens, I'd freeze it and save it to make cake balls. I made Red Velvet Cake Balls last year and they were a huge hit!

So this weekend when my second son Caleb asked if he could make something sweet for our lunch at church, I told him, "Yes, how about cake balls?"

He and Joshua got the cake out of the freezer, whipped up a small batch of vanilla buttercream (1/4 of this recipe), and they got busy! 

If you want a really detailed recipe with instructions for cake balls, you can search online (I search with Swag Bucks) and find a ton of them.  Here... I'll just give you the short version.

All you need is a cake mix (and ingredients on the box), a can of frosting (or a small batch of homemade frosting), and either chocolate, white chocolate, candy melts, etc.  We also used some red and blue sprinkles since it's Memorial Day weekend!

To make the balls, you bake the cake (according to package directions), allow it to cool, then crumble it all up in a big  bowl.  Add in a can of frosting (or 1 1/2 - 2 cups of homemade frosting) and mix it all together.  With your bare hands is most effective.

Then roll the cake into balls (around 1 - 1 1/2 inches) and place on a cookie sheet.  Freeze for about 20 minutes, then dip/roll around in melted chocolate (or almond bark or candy melts, etc.).  That's it!  Delicious, yummy cake balls!!

Meal Plan Monday :: May 30

It's Meal Plan Monday!  Be sure to hop over to I'm an Organizing Junkie to see what everyone else is having and you can view my previous menus here.

I haven't done a meal plan in about a month, but I have lots of things I need to "use up" this week before they go bad, so I wanted to write down my ideas and not let any food go bad! 

The main thing I have on hand is buttermilk that is at it's expiration date.  Therefore, I made a chocolate sheet cake for church today (it uses buttermilk) and also the pancakes and pasta Salad on this weeks plan!  I also have lots of leftovers in the frig that we'll eat up for lunch!

Breakfast
Super Fluffy Buttermilk Pancakes, Sausage x2
Scrambled Eggs with Rice and Cheese, fruit
Oatmeal and/or Yogurt x2
Cereal with fruit x2

Lunch:
Black-eyed Peas & Cornbread
Mac & Cheese with Broccoli
Turkey Sandwiches, Oranges
PB&J,Apples
Leftovers x3

Supper: 
Buttermilk Crab Pasta Salad, Fruit
Rotisserie Chicken, Sweet Potatoes, Green Beans
Broiled Tilapia, Rice, Green Beans
Grilled Chicken & Corn, Potato Salad
Sandwich Night
Homemade Pizza, Salad

Star Wars Birthday Cake + {Durable} Chocolate Cake Recipe

Last weekend I made this fun Star Wars Birthday Cake... and I almost forgot to share it with you!   Apparently, I was a LOT little stressed out last week, so maybe that's why.

I actually  made one other cake that I totally forgot to even take pictures of, so I can't post it.  But it was nearly identical to this Hot Pink Graduation Cake, except I covered it with electric hot pink marshmallow fondant over the buttercream and I left off the candles!

Anyway, so, I wasn't as creative as I usually am with cakes, but I think it still turned out cool (it was a boy's cake... I can't say it was cute...hehe).  I used this Star Wars Cake topper set (I feel like I totally cheated), but I did make the "7" and stars out of gum paste. 

So, on the inside, this is dark chocolate cake (it's actually the recipe I use when anybody asks for chocolate cake...dark or not), but it's super delicious, really sturdy for tiered or carved cakes, and very, very moist!

It's just an adaptation of my Vanilla Cake Recipe, but just for kicks, I thought I'd finally add it to my list of recipes!

Super Moist {Durable} Chocolate Cake

1 chocolate cake mix (I only use Duncan Hines Dark Chocolate Fudge)

3 whole large eggs

1/2 cup water

1/2 cup oil

8 oz. sour cream (~1 cup)

1 small box instant chocolate pudding

Thoroughly mix all ingredients together (blend for at least 3 minutes).  Bake at 325° for about 25-35 minutes (for 8 or 9 inch pans - adjust for larger pans), until just a tad under done.  It will finish baking as it cools.

I know the baking instructions are vague, but if you use it often, you'll get a feel for how long to bake it.  I do a toothpick test to be sure each time.  This cake is delicious, moist, and dense enough to stand up to multiple tiers! I get compliments every time I serve it or make it for customers and I don't think you'll be disappointed!

Teacher Appreciation Trojan Cake

My Mama is a public school teacher (yay for teachers!!) and she asked me to make a cake for her co-workers/friends for the last day of school- to show them that they are appreciated!

She gave me a tshirt with the school mascot and colors and asked me to write "God Bless You Teachers" on the cake.  So I did just that!

Other than the letters, which were time-consuming (but totally my choice and fault because I can not write in buttercream, so I have to cut them!!!),  the actual Trojan "guy" was my biggest challenge.

I decided to go a (maybe) less traditional route and just paint him.  I shaped some of the yellow/gold fondant in an arch around some white fondant, cut it to the shape of the picture on the t-shirt, then I used a paintbrush and black gel food coloring and just painted him! 

 

I think he turned out pretty good and my Mama loved the cake!  Oh, and I also opted to not cover the entire cake in marshmallow fondant.  Partly because I was lazy, but also because I wanted a chance to work on smoothing buttercream in a low-stress situation (my Mama is an easy-to-please customer!)! 

The inside was marbled yellow cake and dark chocolate cake (to "match" the color scheme), and it was covered in vanilla buttercream!  The letters, balls (on the edges) and Trojan were all marshmallow fondant.
