Dumbbell Cake : When at first you don't succeed...

 I was so excited about my cake order this week.  Until I started working on it.

You see, the customer wanted a "dumbbell cake".  As soon as she said it, I was excited about making it.  I envisioned baking two 4 inch or 6 inch round cakes, standing them on their sides, putting a fondant or gumpaste tube between them...it all sounded great.

Oh, and to add a few more servings, I was going to place the dumbbell on a single layer 10x10" sheet cake.  Sounds easy, right?  That was the plan.   In my head.

In real life... things didn't work out so well.  When the 96° weather...with 90% humidity set in here in southern Mississippi, my cake was off to a bad start.

I baked two 4" round cakes, covered them in buttercream and put them in the frig to chill.  I didn't get pictures, but they were already starting to sag. Uh-oh.

While I let them chill, I made some lime green fondant (the color the customer requested) and made a "tube" to use as the handle for the dumbbell.

Then after a little while, I proceeded to cover the cakes.  The buttercream covered cakes started falling apart.  It was hard to seamlessly cover a "wheel" shaped piece of cake.  They immediately began to collapse.  The more I worked  and tried to get them smooth and seamless, the worse they looked.  The fondant was too soft.  And too heavy.  And it just would not work on the round shape.

It was a mess.  This is what they looked like after resting overnight.




Yuck.  So, I opted for another option. I couldn't quit.  I had to try again.  It's not as substantial as I originally planned.   I feel like it was a cop-out actually. 


How'd I do it?

I rolled out some fondant (with Tylose powder mixed in to help it harden) almost an inch thick.  I used a cookie cutter to make the ends.  I rolled a solid fondant handle (with a pencil-sized dowel down the middle for support).  And I let them dry.  And I glued them together with sugar glue.


It wasn't perfect and I do want to figure out how to do it the other way... but I think it turned out okay!  And the customer was happy.

    Chocolate Buttercream Frosting

    A couple of weekends ago, I made cupcakes for a customer for Father's Day... a dozen vanilla cupcakes with {lime green} vanilla buttercream frosting and a dozen chocolate cupcakes with chocolate frosting.  Oh, and three dozen yeast rolls... but that's a post for another day.



    Anywho... I made them for her and when asked for my chocolate frosting recipe, I realized I've never posted it.  Or if I have, I can't find it ;-).  Anyway... here's what I use most of the time for chocolate frosting.

    Chocolate Buttercream Frosting
    Yield : appx. 6 cups of frosting
    Ingredients:
    • 1 cup solid vegetable shortening*
    • 1 cup salted butter, at room temperature (2 sticks)
    • 1 1/2 cups cocoa powder
    • 1 1/2 tablespoons vanilla extract
    • 1 teaspoon butter flavoring (optional)
    • 2 pounds confectioners' sugar
    • 6-8 tablespoons warm water (or milk, but water allows the chocolate flavor to be stronger)**

    In a large mixing bowl, cream shortening and butter until completely smooth and creamy (I used my Kitchenaid with the paddle attachment).  Add cocoa and vanilla.  Gradually add powdered sugar, one cup at a time, beating well after each addition. Be sure to scrape down the sides of the bowl often!

    When all sugar has been mixed in, the frosting might be dry and a little crumbly.  Start by adding 1 tablespoon of water (or milk) at a time, and mixing.  Continue to add and mix until you get the consistency you desire.   Keep it thicker for decorating, or add extra milk or corn syrup for a thinner spreading consistency!

    *You can use 4 sticks of butter and no shortening if you want, but it is a much softer frosting and not great for decorating!   It also melts easier and starts to "sag" pretty quick unless refrigerated.  The shortening helps to stabilize the frosting!

    **I have substituted strong coffee for some of the water or milk to get Mocha Frosting!


    So.. that's it!  You could also try Whipped Chocolate Ganache as a chocolate frosting but I'm not sure it's as "sturdy" for decorating!

    For my vanilla cake recipe, I always use Pillsbury White cake mix and I pay around $1 per box for it at Walmart (plus tax and the gas to get to Walmart...almost 40 miles away).   Since I have lots and lots of orders for cakes over the next 6 weeks or so and many of them are vanilla cake, I decided to check some online prices and see if I could order it in bulk and save money.

    The first place I checked was on Amazon (because sometimes they have great grocery prices) and I found that I can get a 6 pack of Pillsbury White Cake mix for only $5.97... with FREE shipping and NO taxes.  That price is when I choose the "Subscribe & Save" option**. 

    That's cheaper than I pay at Walmart!  So... I just ordered 48 boxes of cake mix (I added up and I already have orders for at least 24 of those boxes!!).  You can also get a 6 pack of Pillsbury Strawberry Cake Mix for only $6.31 (or $1.05 per box).

    Pink & Green Sheet Cakes for 1st and 80th Birthdays

    In addition to the new Pink & Green Monkey Cake for this weekend, I had orders for a couple of sheet cakes.  I don't get to do many sheet cakes, but I enjoy doing them just as much as tiered cakes, so I was excited!

    In addition, these cakes were for a 1st birthday, and an 80th birthday.  Both families were celebrating a huge milestone in their loved ones life and both were very special!

    For Mrs. Laverne... she celebrated with her biological family and her church family.  She's a sweet, precious lady who has lived a simple, but meaningful life.  Her daughter (who also happened to be my pastor for many years), asked me to do a simple and pretty cake.  She needed 75-100 servings and she wanted pink - her mother's favorite color.


    This sheet cake was 12 inches by 18 inches.  It's the largest sheet cake I've ever made.  It was 2 layers of cake - one vanilla and one strawberry, filled with a yummy, generous layer of vanilla buttercream.  It was around 4 inches tall...


    ...and who knows how heavy!?  The bow is made out of fondant, with Tylose powder mixed in so that it would dry hard.  I made it about 3 days ahead so that it was good and solid for the cake! 


    For the other sheet cake, it was lots of fun too!  This was for Sophie's 1st birthday.  Her Mama asked for lots of pink and green buttercream (because grandma really loves frosting... isn't that sweet?).  


    With the exception of the polka dots (which were homemade fondant), this cake was decorated with all buttercream, .  I piled more than half an inch of pink buttercream in between two layers of vanilla cake, then I also piled it on the top and all around (so much that I got really, really close to the edge of the cake board... oops).


    I smoothed it out with my new Ateco Smoother and added a green dotted buttercream,  border with my large Wilton round tip.  This cake was also around 4 inches tall, very heavy...and just so sweet.  I love the pink and green combination and polka dots are so cute and versatile.

    A New Pink & Green Mod Monkey Cake!!

    So, the original Pink Mod  Monkey Cake that I made back in April is the most visited page on my blog (ironic... considering this is technically not a cake blog).   Well, this week I got to make another Pink Mod Monkey Cake... and it was lots of fun!!


    This one was more pink and green (a little less brown than my original)... it had polka dots, tiny flowers, frilly stripes, multi-colored fondant balls... and of course a sweet little monkey.  I used my Funky Letter Cutters for Sophie's name.


    It was made for Sophie's first birthday... so of course, she had to have a matching smash cake too!


    This is a poor quality photo (because I didn't think to take it until after the cake was all boxes up), but I love the way the stripes look from the top!  I really enjoyed making these cakes!!  (I also made another pink & green cake for Sophie here... we did a sort of matching sheet cake for a party in a different town with some family that doesn't live nearby).


    The smash cake and bottom tier of the big cake was vanilla cake with vanilla buttercream,  and the top tier was strawberry cake with cream cheese buttercream

    The big cake was covered in marshmallow fondant and decorated with a gum paste number and letters, and all the other decorations are marshmallow fondant.  The smash cake was all buttercream (except for the polka dots!).
