Three White Cakes... and a good use of cake scraps!

I've already posted these pics on my Facebook page, but I wanted to share a few details here.  Last weekend I made these 3 "simple" cakes.  I've told you guys before that I do not like to decorated with buttercream, but I'm trying to step out and do it more often so that I get better at it!


The one front and center was an order I had for a red velvet cake with cream cheese buttercream. The customer wanted a "plain" cake, so I just added a tiny bead border and scrolling with a number 3 piping tip.


For the back left cake, I did a buttercream roses cake.  This was inspired by Amanda (I am Baker) and I love, love, love this cake!   It's so simple to make, and yet so very pretty!  This one was vanilla cake with vanilla buttercream.



Those last two pictures are from my first buttercream roses cake a couple of weeks ago.  The cake came out great, but I finished it late at night and it was for an order that my hubby had to take to work early the next morning, so the lighting for my pictures was yucky!  Anyway....

Lastly, and this is where I want to focus... I used leftover cake scraps to make this ruffly cake. 


You see, when I baked the 7x11" cakes for the Pool Party cake and the iPhone cake, I had to trim both of them to level them.   Plus, I baked them in a 3" high pan instead of 2" so they were a little thicker than I needed/wanted.   So, I trimmed off all those tops and put them in a Tupperware container.


Later that day, I wondered.... what can I do with all that cake?  I hated to just throw it away.  But then as I saw the other 2 white cakes sitting on my table, I had an idea.  I love how Amanda (yeah, I have a huge little obsession with her site) always makes the insides of her cakes so gorgeous and I thought surely, I could come up with something!


How about a trio of white cakes?   So, I got to work making this third cake.


I cut the thin leftovers from trimming the cakes in half (lengthwise) and stacked them into a little rectangle cake (about 5x6").  First two pieces of the white almond cake, then 2 pieces of the chocolate cake (no frosting between those), then the other 2 of the white almond. 

When I was done, I covered them in a layer of buttercream, and then the fun started.  I took my 1M tip and made ruffles.  I made them extra "ruffly" at the bottom and then tapered off toward the top. 


And then when I cut into it... so pretty and yummy!  I was super happy with how this cake looked and tasted... and also super happy that I got to eat a big slice of this deliciousness didn't have to feed all that cake to the chickens (which are waaay bigger than that now)!! Ha!!

    This post is linked up at Hoosier Homemade's Cupcake Tuesday!!


    This weekend was packed full of cake orders... and one order for cupcakes.  She wanted barnyard animals.

    So, I made sheep, pigs, cows, and chicks.   The cows and pigs had matching buttercream covered by fondant faces.   I cut out the faces with the Ateco round cutters and the pink snouts (? is that the right term?) with Wilton oval cutters.  I used edible ink markers to make the nose and eyes!

    The sheep were made by covering the cupcakes with buttercream, then a black fondant face (with buttercream eyes and ears), and mini marshmallows.


    The little chicks were almost all vanilla buttercream (and were copied from my Easter cupcakes =) ).  I added chocolate chips for eyes and a tiny orange fondant beak!


    Here's the whole "herd" of cupcakes!  These might be my favorite cupcakes ever!

    Pool (or Beach) Party Birthday Cake

    This is yet another of the cakes I did for this past weekend.  John Grayson was having a pool party and his Momma asked me to design his cake based on this invitation...


    So, I came up with this little cake!  It would work for a pool or beach party!  I started by making a beach ball with the Wilton Mini Ball pan and strips of fondant...


    and I made the beach towel by cutting ribbons of red fondant, laying them on a rectangle of white fondant and rolling them flat.  To get texture, I laid a paper towel on top of it and rolled it flat too...


    I also made some sunglasses to sit on the front of the cake, although I wasn't really happy with the way they turned out :-(



    I put his birthday message in the middle of a "splash" of water and I cut the letters with these Wilton alphabet cutters.


    Oh, and this cake is on the smaller side... it was 2 layers done in a 11x7 sheet pan.  This cake was White Almond Sour Cream Cake filled with cream cheese buttercream, covered and decorated with marshmallow fondant.

      Look Whoo's 1 Owl Birthday Cake & Smash Cake + Chocolate Fondant Recipe

      Are you all tired of my cakes yet?   Don't answer that!  I promise, I'm working on a website dedicated solely to cakes and as soon as I get it up and running (which might be a few months), I'll stop bugging you with all my cake ramblings!!

      In the meantime, I completed 9 cakes this weekend plus an order of cupcakes!  See below...that's just 6 of the 9 (including the iPhone cake I already told you about).


      Yeah, the one that's cut into was just for us.... for fun.  I'll tell you about it another post.  Anyway, so here's the owl cake up close...

       

      I made it to match this birthday party theme...Look Whoo's One Owl and the customer actually sent me a link to this owl cake and asked if I could make something like that with this theme in mind!  


      So, I made an owl using that tutorial as a guide, but I changed the outside decorations to coordinate with the party theme!   This little cutie-pie owl was chocolate cake with chocolate filling and frosting, covered in chocolate fondant.


      I've never posted a recipe for chocolate fondant, so I thought I'd share today.  Although I'm still not completely happy with the final texture - this is how I make it for now.  It's super simple.

      Chocolate Fondant

      So, this is going to be sort of short and sweet, but here it is:  I use my homemade marshmallow fondant recipe with these additions:  I add 1-2 ounces of good quality semi-sweet or dark chocolate (melted) to the melted marshmallows and I add 1-2 tablespoons of good quality cocoa powder to the powdered sugar.   You may have to add a little more water if the mix gets too dry, but that's it!

      Update: After making this a few times, I've found a few other things I should mention.  First, it seems like I also have to use a little extra shortening to keep this fondant soft and pliable.  Also, the chocolate fondant also crumbles/cracks alot easier than regular fondant - the texture is just not great.  It also dries out really fast and I find that I can't use it the next day - I almost always have to throw away any that I don't use pretty quickly. Lastly, I often add some extra brown and/or black gel gel coloring to get the color a deep rich, chocoalte brown.  But without a doubt, it's easier to get this recipe a good shade of brown vs. just adding brown or black coloring to regular marshmallow fondant.   That takes a ton of brown color!!

      If anybody else makes/uses chocolate fondant, I'd love to hear tips on how to improve the texture or get the color easier!


      I sat that little owl on top of a 10" round white vanilla cake with vanilla buttercream filling... except I added pink gel coloring to the cake to make it pink too!  =)  I made her name with the Funky Letter Cutters (just like the monkey cake) and the ribbon around the bottom was made with the Wilton Fondant Ribbon Cutter Embosser Set.    The leaves were cut with a leaf cutter from this Wilton set.


      When I got done with all that, I made her a matching smash cake.  Except for the leaves it was all buttercream (easier to "smash"!!). 


      I hope Kinslee had a wonderful birthday and loved her owl cake!
