Rose Bakes... White Chocolate Oreo Cream Filled Cupcakes {Recipe!}

So, these cupcakes are just plain deliciousness.   I created them for one of my husband's coworkers who loves my cupcakes and loves Oreos.

I altered my Vanilla Cake recipe (see below), made up an Oreo Cream Cheese filling (again... see below), and topped them with Cream Cheese Buttercream and a mini Oreo.

White Chocolate Oreo Cream Filled Cupcakes

Yield: 24-30 cupcakes 

White Chocolate Cupcakes:

1 Pillsbury White Cake Mix (cheaper from Amazon than Walmart when you buy with Subscribe & Save)

1 cup liquid egg white (or 4 egg whites)

1/2 cup water

1/3 cup oil

1 cup sour cream

1 small box Instant Jello White Chocolate pudding

Thoroughly mix all ingredients together.  Spray the cupcake liners with non-stick spray and use a medium cookie scoop to fill the liners. Bake at 350° for about 15-18 minutes or just until done.  Allow the cupcakes to cool, then fill with the Oreo Cream filling (recipe below).

I use a round frosting tip, poke a hole with it in the top of each cupcake and squirt the filling in until it bulges out of the top (my son said they looked like they were about to erupt...).  You can't have too much filling, if you ask me... =)

Oreo Cream Filling:

8 oz. cream cheese, at room temperature (takes about 2 hours to reach room temp)

1/2 cup white sugar

2 cups Cool Whip

12 crushed Oreos (I do mine in a food processor)

Mix together the cream cheese and sugar until smooth.  Fold in the Cool Whip, then the crushed Oreos.  Spoon into a frosting bag and refrigerate until ready to fill the cupcakes.

After the cupcakes are filled, pipe on the Cream Cheese Buttercream (I used a large Ateco Star tip) and top with a mini Oreo.

Don't waste any time eating one.  They are SO yummy!   Also, the White Chocolate pudding and egg whites made for a very pretty white cake (no yellow tint) and the light, yet sturdy texture is perfect for tiered cakes or carving... making this a great recipe for wedding cake!

However, I must confess: I really couldn't "taste" the white chocolate like I hoped.  But it sounded good in the title... so I left it...teehee.
 
Tip:  Keep these refrigerated... the cream cheese frosting gets really soft at room temperature - especially in this summer heat!

Rose Bakes... Boy & Girl Orange Birthday Cakes

This past week, I got a request to do a pair of cakes for cousins sharing a birthday party.  These were fun - the inside of each was rainbow/tie-dyed vanilla cake that matched the curls on top of each cake!  I covered them in orange marshmallow fondant and cut the letters with funky alphabet cutters (for Adrienne) and Wilton cookie cutters (for Jaden).

For the curls, I cut strips of fondant (with Tylose added in) using the FMM ribbon cutter then I wrapped the strips around bubble tea straws to dry.  These did not get as hard/dry as I prefer (thanks to lovely Mississippi humidity and heat), so I had to use floral wire to stand them up, but they still turned out cute!

{An Easy} Pink Princess Castle Cake

A couple of weekends ago when I had 10 cake orders for the week, I got so busy that I never got around to showing you pics about all of them.  I may not ever get them all written up, but you can find them all on my Rose Bakes fan page.   However, here are the previous cakes I did tell you about...

...and today I'm showing you an easy Pink Princess Castle cake.  

A couple of months ago, my darling sister-in-law Ariel {jokingly} told me that she wanted a Barbie Princess Castle cake when her birthday came.  I vowed that's what she would have and it became a joke between us (although I secretly planned to do it all along!).

Then when I made the Peace Sign cake and it was a tie-dyed cake inside, Ariel added to her request that she wanted a Barbie Princess Castle cake and she wanted it to be tie-dyed inside.  The girl doesn't ask for much...hehe.

Anyway, because I had so many orders for her birthday weekend, I had warned her that her cake might be late (she kept insisting that I didn't have to do it at all, but I was not going to disappoint!).

Then, her sister called and said she wanted to have a surprise birthday party for her and asked if I'd make a cake for that weekend... of course, I already knew the perfect one!

Anyway, when I did a Swagbucks search for castle cakes, many of them were incredibly complicated with lots of towers!  Because of my huge workload that weekend, I didn't have time for all of that so I set out to do a simplified cake.

I made her cake with two 8" square cakes stacked, then a 6" round cake and 4" round cake.   For the faux-towers, I just used waffle ice cream cones on the corners.  Everything you see is edible except the toothpicks holding the tiny flags.  I marbled some black gel in to marshmallow fondant for the stones. 

I added texture by using fondant impression mats on the door, the windows and adding the tiny bricks to the sides.  And of course...

Zaycon Foods:: Fresh Boneless Skinless Chicken Breasts Review + Sign-Up

Since we've moved to the country almost two years ago, the part of our budget that has been hardest to control has been our groceries.  We live 40 miles from a Walmart and even further from any other chain grocery store.  

In that same time frame, I've become more educated about our food, in particular our meat and it's quality!  So, when Zaycon Foods contacted me and said they are planning to begin doing events in my local area (Mississippi) and asked me about doing a review of their fresh, boneless, skinless, non-hormone chicken breasts, I said, "Yes!!"

What I come to find out was, in addition to being a healthier option that the chicken at the grocery stores, their chicken costs less per pound than any chicken I could get - even on sale!  The average price of their non-hormone chicken is only $1.49 – $1.69 per pound (exact price depends on your area). I was stunned!!

Never heard of Zaycon Foods?  This company has one goal: to bring high quality products to families at a price they can afford. 

Zaycon gets their fresh chicken straight off of a farm and delivers right to your local area. All the chicken is sold in 40 pound bulk boxes so you will be able to stock your freezer until the next time they come around (usually every couple of months).

After I agreed, about 3 weeks later a Zaycon rep personally dropped off a 40 pound box of fresh chicken at my front door.  I was super excited to try it out and I was not disappointed!  That was a few weeks ago and I just wish I had thought to take pictures!

The chicken came in one large box - with (4) bags inside.  The whole chicken breasts were HUGE!  I mean some of these whole breasts were around 2 pounds and they had never been frozen!

The day it was dropped off, the hubs and I spent the afternoon dividing it up and freezing it.  We ended up with about 25 freezer bags full of chicken portioned for our family (1.5-2 pounds each).  We cut some into chicken tender pieces.  We left cut them all at least in half, some in quarters.  We put some in a marinade and into the freezer bags.  We cooked some that very night in a wonderful Chicken Parmesan dish.  It was so good!

Since then, we've eaten it several other ways and it's be great every time!  This meat has great flavor, it's moist and it's versatile.
